Sausage Peppers and Onions

1 pkg. Italian Sweet or Hot Sausages
2 Green Bell Peppers, cut into thin strips
1 Red Bell Pepper, cut into thin strips
1 Large Vidalia Onion, cut into thin strips
Balsamic Vinegar
Olive oil
Salt and Pepper
1 pkg. Bakery Style Hot Dog Rolls

Par boil the sausages for 8 to 10 minutes. When you remove them from the water poke them with a fork several times to minimize flare up on your grill. Grill them on low for about 10 minutes being sure to watch and turn them every couple of minutes.

In a skillet heat olive oil over a medium heat. Add all of your veggies and fry them for about 6 minutes. Your Onions will start to look translucent. Pour about an 1/8 cup of balsamic vinegar over the veggies. Now drizzle some olive oil over them. Salt and Pepper and stir veggies for another 2 minutes to coat them. Remove from heat and they are ready to serve.

When the Sausages are done grilling. slice them length wise about half way through. Place in a bun cut side up and pile on the balsamic veggies!
