Stuffed Boneless Chicken Breast

4 Boneless Chicken Breasts, Pounded to 1/2" thick
Stuffing, boxed or homemade
Butter, softened
Paprika
Garlic Powder
Oregano

Stuffing Recipe
2 loaves day old bread
1 Onion
2 Celery Stalks
1/2 Cup Butter
2 egg
Sage
Poultry Seasoning

Rip up the 2 loaves of bread into small pieces and place on a large piece of wax paper on the counter or on a baking sheet. Saute the onion and celery in the butter for about 7 to 8 minutes or until the veggies are softened and clear. While they are sauteing, Season bread with sage and poultry seasoning. I have never measured, I just make sure that the top of the bread has a good coating of each. Whisk egg and pour over the bread. Now, pour your sauteed veggies and butter over the bread and mix.

Putting together your stuffed Chicken
Make a large ball, about the size of a baseball, out of some of the stuffing. place a pie ce of pounded chicken over the stuffing and tuck the chicken around the bottom. place in a 9X13" pan. Cut and spread a large pad of butter over the top of the chicken. Sprinkle with garlic powder, paprika, and oregano. Bake at 375 for about 35 to 40 minutes.
